Ingredients
- 2 servings of 48 hour beef shin
- 2 servings of Pappardelle pasta
- Spinach
- Pangrattato - Breadcrumbs mixed with Parmesan & Herbs
- Gorgonzola
Method
- Bring a pan of water up to boil, add the beef shin pouch when boiling – now turn down to simmer for 10 mins
- After 10 mins remove pouch an set aside ( be careful its very hot !)
- Now bring the pan back up to boil and add salt
- in the meantime , open your beef shin pouch carefully as its very hot & add spinach in so it starts to wilt
- Drop in the pappardelle & cook for 1 mins & drain
- Now combine the pasta & the beef shin & move around in a circular motion, finish with Beef stock to taste
- Break up the gorgonzola & move around the pan until it has started to melt
- This dish is perfect if there is liquid at the bottom of the pan if not we advise you to add more beef stock
- Garnish with Pangrattato
