Ingredients
- Roasted Mediterranean Vegetables & sunkissed tomatos
- Ciabatta Bread
- Burrata
- Passata Sauce
- Rocket Salad
- Evoo - Extra virgin olive oil
- Garlic & herbs
- Balsamic glaze
Method
- Preheat the oven to 180C
- Take your garlic and herb oil and drizzle over both ciabattas
- Spoon the passata over the ciabatta bread
- Add the Mediterranean vegetables
- Drain the baratta from the liquid and tear in half. Tear over the two slices of ciabataa
- Transfer to a baking tray and place in the oven
- Turn the oven down to 160C and bake for 8-10 mins and move around the oven to make sure you get an even colour on both bruschetta
- On two plates spoon the balsamic around the plates and dress with the rocket. Remove the bruschetta and Place on the plate. Drizzle with the olive oil. Enjoy!
